There are a few blogs that I default to when I am searching for recipes, and Cookie and Kate is one of them! I had a meal prep recipe which called for zaatar and I did not have any, but I did have all of the ingredients for this zaatar recipe. When I make again, I will toast the sesame seeds for a bit before adding the herbs since I often use dried herbs from my garden and they seem to toast more quickly. Quick and easy recipe!

I really like this recipe! However, since I’m on a low sodium diet I omit the salt. I use this spice mix liberally in many ways:
- sprinkle on toasted, buttered English muffins for a tasty easy breakfast
- liberally on potatoes for roasting or in the air fryer
- liberally on vegetables to cook on my Blackstone griddle: onions, peppers, mushrooms, romaine lettuce halves, summer squash, etc
- ditto on thin sliced meats such as chicken or skirt steak or flat iron steak
I haven’t yet tried it on fish or shrimp but I’m sure that it would be great

This blend is beautiful! But your process/technique can be improved. Sesame seeds take much longer to bloom over heat. I would suggest toasting the sesame seeds medium/medium low heat alone first. Then use a mortar/pestle or just the back of a spoon in bowl to break the sesame seeds, grind just until broken open, just a bit but not completely to a paste. Then gently bloom your Herbs, Sumac, Salt over low heat. Incorporate into the sesame seeds and grind with mortar and pestle or back of spoon until broken and oils are released. The herbs and especially the Sumac and Salt will burn before you have released the oils in the sesame seeds or other Herbs. I love your combination of ingredients for this recipe. I am using your recipe for Za'atar recipe for a Lebanese artichoke/yogurt dip and it just yummy! I utilize many of your recipes.....Thank You!
