Easy to make and sauce great. I did not like the flour tortillas. I was hesitant about this so I made 1/2 flour and 1/2 corn. Everyone preferred the corn tortillas so I only had flour ones leftover. I recommend making with corn and you will be happy with these!

Thanks for the reply update I know some recipes aren’t conducive to a simple “multiply everything by 2 for a double batch,” so I wanted to verify that it was OK to do that with this recipe. Thanks for this great site! I’m not vegan/vegetarian myself, but I have a number of friends who are; and I’m always able to find easy and delicious recipes to share with them.

Hi Becky, the plug in that scaled the recipe was becoming unreliable, so I turned it off. You can simply multiply the ingredients to scale the recipe.

At the time I printed it out, there was an option to increase the recipe to 2x or 3x. I now need to increase the number of enchiladas I’ll be making for guests, but I don’t see the option for the larger sizes. Am I missing something??
