Hi Marion, yes I think this freezes well, and you can add the garnishes after cooking.

Even their parents loved it. I love the recipe because it has many tasty and healthy ingredients. I did feel the corn tortillas were a bit too strong in flavour so will try using plain or whole wheat tortillas next time. I will definitely make it again soon. Great recipe, thanks Kate!

Delicious. Big hit with my husband and guests. Roasted the veggies and then assembled the casserole in the afternoon. Kept in the fridge till dinnertime. Brought to room temp first then into the oven per instructions. Could have heated up a bit longer. Served with Mexican rice, guacamole, salsa. Will def make again. Thanks!
