He loves garlic, olives, almonds, celery, everything.  There&#039;s a covered casserole dish of it at all times in our fridge.   His cholesterol is way low, his blood pressure is now normal for his age, &#038; he&#039;s off medications for those concerns.  Thank you for sharing this recipe, it&#039;s a real joy in our house.]]></description>

Used mostly Castelvetrano olives both times, with a few regular green olives in the mix. Better quality parmesan (aged &#062;24 months) is worth the splurge for this, in my opinion. Served along with hummus. Leftovers were an excellent salad topper.]]></description>

I soaked raw almonds over night, removed the peels, then toasted as written for more like 20 minutes, then turned the oven off and left them in the oven for maybe 15 minutes to really toast them well. They stayed crisp in the salad all day. I added Pomegranate arils and they were a welcome addition for a touch of sweet added to all the other flavors.]]></description>
