Do pay attention to this recipe&#039;s yield, which is mentioned in cups rather than bowls or servings.  Even though I doubled the recipe, the yield was not high enough to suit me, especially given the amount of time and work involved in peeling and chopping so much fresh squash.  When I make this recipe again, I plan to triple it and roast the squash instead, which will significantly reduce the prep time.  As suggested, I was careful when adding the red curry paste, which I did by the teaspoonful, until it suited my husband&#039;s palate. (I used Thai Kitchen&#039;s paste as suggested). I started with 1T (then added more, ending up surpassing the recipe amount as we like spicy food, but had never used this particular brand) tasted, then waited until it had reduced a bit and recasted and adjusted. 

I also added ginger to taste - loved it. Really rounded out the flavors.

I also roasted the seeds and served along with the soup as a topper. 

My hub liked this one just as much as my usual with Indian spices. 

It also came together rather quickly for a weeknight meal (I roasted the squash yesterday and refrigerated over night).]]></description>

It was really easy and good. Hope I am not offending Vegetarians. My original Squash Soup is vegetarian but this is sublime. With my modifications. Used 2.5 T of red curry. Will make again.]]></description>
