They&rsquo;re 100 percent delicious, featuring perfectly tender insides and golden exteriors that offer a light crunch along the edges. Jammy burst blueberries, lemon zest and a light sprinkle of raw sugar take them to the next level!</p>



<p>I didn&rsquo;t come up with this idea myself. When I published my <a href="https://jyotirecipe.pages.dev/blueberry-scones/" type="post" id="45991">Blueberry Scones</a>, which are made with whole wheat or all-purpose flour, I received several questions about how to make the recipe with almond flour. </p>



<p>Since almond flour has become my favorite flour over the past year or two, I had to figure it out. Despite being made entirely with almond flour, the scones don&rsquo;t taste overtly of almond. They&rsquo;re easy to make with simple, wholesome, lower carbohydrate ingredients, so they&rsquo;re a win all around.</p>



<p><strong>It took seven tries to get the recipe just right.</strong> Along the way, it became the topping for a <a href="https://jyotirecipe.pages.dev/peach-cobbler/" type="post" id="46896">Peach Cobbler</a>. I&rsquo;m delighted with this recipe and all the variations you&rsquo;ll find below.    </p>

<p><strong>Palak paneer is my favorite dish to order at Indian restaurants,</strong> and I&rsquo;m excited to offer my homemade version to you! <p>Palak paneer hails from the Punjab region in Northern India. I hope to visit India someday, but until then, I&rsquo;m basing my version on the various Indian restaurants I frequent. I wanted to learn how to make my own palak paneer with organic spinach when I was expecting our son, since <a href="https://www.ewg.org/foodnews/spinach.php">spinach is unfortunately higher in pesticide residues</a> by weight than any other type of produce. </p>



<p>I made this dish over and over (no less than six times, to be exact) to ensure that the recipe offers maximum flavor while being streamlined from start to finish. Now you can make palak paneer for dinner any time you crave it. This recipe is ready in about 45 minutes! </p>

<p>These muffins follow the same formula as my other popular &ldquo;healthy&rdquo; muffin recipes, but you won&rsquo;t guess it upon your first (or last) bite. They&rsquo;re made with whole wheat flour if you wish, and they&rsquo;re sweetened with honey instead of plain sugar, which makes them extra delicious. Greek yogurt offers a subtle sour cream-like tang that makes these taste like bakery-style muffins, while providing some extra protein. </p>

It&rsquo;s almost as versatile as my favorite&nbsp;<a href="https://jyotirecipe.pages.dev/lemon-vinaigrette-recipe/">Lemon Vinaigrette</a> and suits some flavors even better.</p>



<p>This dressing comes together quickly in the food processor and keeps in the refrigerator for up to one week. Sometimes having a vibrant sauce on hand makes all the difference!</p>

<p><strong>These muffins are bursting with fresh cranberry and orange flavor.</strong> This recipe calls for <em>fresh</em> cranberries, which are generally available in United States grocery stores from October or November through December. You can also use frozen cranberries, but I don&rsquo;t recommend dried cranberries here.</p>

<p><strong>In addition to blue cheese (try a mild one, like gorgonzola), you&rsquo;ll need just a few basic ingredients to make this dip:</strong> sour cream or Greek yogurt, chives or green onion, fresh garlic, salt and pepper. Rarely do I suggest Greek yogurt as a worthy alternative to sour cream, but it really works here and yields a lighter dip. For a different flavor profile altogether, try feta cheese instead of blue.</p>

<p><strong>Would you look at those colors?!</strong> This roasted beet side dish is the prettiest recipe I&rsquo;ve made in a long time, and the leftovers look like an abstract Easter basket.</p>



<p>This recipe comes from a new cookbook called <a href="https://amzn.to/3ikmIip" target="_blank" rel="nofollow noopener noreferrer">Eat What You Want</a> by Gaby Dalkin. You may know Gaby from her blog, <a href="https://whatsgabycooking.com/" target="_blank" rel="noopener noreferrer">What&rsquo;s Gaby Cooking</a>. I love Gaby&rsquo;s fresh, California-style cooking and boundless enthusiasm for all things food-related!</p>

<p>The funny thing is that I&rsquo;ve never met Gaby in person, but I feel like I know her after watching her on <a href="https://www.instagram.com/whatsgabycookin/" target="_blank" rel="noopener noreferrer">Instagram</a> over the years. We share an affinity for fresh herbs and flaky sea salt, and I turn to her blog and cookbook for inspiration often. When she offered to send me a copy of her cookbook, I said yes, of course.</p>



<p>Her newest book features &ldquo;125 recipes for real life&rdquo; and I had a hard time choosing just one to share with you. I&rsquo;ve been on a beet kick lately, so beets won the draw. This recipe also gave me an excuse to make Gaby&rsquo;s go-to basil vinaigrette, which I&rsquo;ve been meaning to try for ages.</p>



<p>This dish features roasted beets over thick yogurt (I used Siggi&rsquo;s &ldquo;skyr&rdquo; instead of labneh), with fresh basil vinaigrette, avocado wedges, and a heavy sprinkling of fresh herbs. Even my husband, who&rsquo;s not a fan of beets, went back for more.</p>
