<p><strong>Let&rsquo;s hear it for burrata cheese!</strong> I always order burrata when I find it on restaurant menus, and we&rsquo;ve had some stellar combinations this summer. I can&rsquo;t resist burrata&rsquo;s contrasting textures&mdash;it&rsquo;s like fresh mozzarella on the outside, but lusciously soft and creamy on the inside. </p>



<p>For this recipe, I designed a quintessential summertime burrata salad with fresh tomatoes. Serve it with <a href="https://jyotirecipe.pages.dev/crostini-recipe/">crostini</a> or a loaf of crusty bread to make it an appetizer. This burrata dish comes together in 15 minutes, believe it or not, and it&rsquo;s a real showstopper. </p>



<p>I wanted to keep it simple but make it taste special, so I drew reference from my <a href="https://jyotirecipe.pages.dev/easy-tomato-salad-recipe/">Easy Tomato Salad</a> and <a href="https://jyotirecipe.pages.dev/tomato-basil-bruschetta-recipe/">Tomato Basil Bruschetta</a>. <p>Since I already changed one primary ingredient, I took the liberty of adding some chickpeas and feta cheese, more ingredients that you would not expect to find in tabbouleh. They&rsquo;re <em>entirely optional</em> and absolutely delicious. They make the salad more hearty; if you use both, it could qualify as a light meal on its own.</p>



<p><strong>This herbaceous salad is so refreshing on a warm day.</strong> It features fresh parsley and mint, tomato and cucumber, olive oil, lemon juice, garlic, and quinoa. The proportions remain true to the traditional recipe, so it contains more parsley than quinoa, and the lemon packs a punch. I think you&rsquo;ll love it. </p>

<p>I fell in love with arrabbiata sauce during a college semester in Bordeaux, France. I was actually a picker eater, and I was learning how to cook by playing around in our dorm&rsquo;s lackluster kitchen. We lived on cheap pasta during those months, and I livened up my noodles with various saut&eacute;ed vegetables. </p>



<p>The spiciness of the arrabbiata sauce offered so much bold flavor that it made my simple meals taste exciting and helped me learn to love veggies like zucchini and bell pepper. I&rsquo;ve come a long way since then, and it all started with arrabbiata sauce! </p>

I&rsquo;m so excited to share this recipe with you and hope the photos speak for themselves. This vibrant meal is almost too delicious for words to capture.</p>



<p><strong>The bowls are a <em>very</em> abstract take on Mexican fajitas,</strong> which typically feature strips of bell pepper and onion cooked with steak, served with tortillas and toppings on the side. These roasted fajita veggies offer similar flavor and texture.</p>



<p>Halloumi cheese hails from Cyprus, an island country in the Mediterranean&mdash;far, far away from Mexico! I love halloumi because it offers a salty, creamy, chewy and almost meat-like texture once roasted. I&rsquo;ve used it in place of bacon to make <a href="https://jyotirecipe.pages.dev/vegetarian-blt-sandwich-recipe/">vegetarian BLTs</a>. Conveniently, the veggies and cheese roast in the oven simultaneously on separate pans.</p>

<p><strong>I love how this recipe comes together and I think you will, too.</strong> Basically, we&rsquo;ll cook the pasta on the stovetop and roast the remaining ingredients in one baking dish. Stir it all together, add fresh basil, and you&rsquo;re ready to eat. You&rsquo;ll have plenty of time in between steps to tidy the kitchen or chat.</p>

<p><strong>This roasted red pepper and tomato soup is more than just a recipe&mdash;</strong>it&rsquo;s a celebration of the end of the summer heat. It&rsquo;s the option in between <a href="https://jyotirecipe.pages.dev/ultimate-gazpacho-recipe/">gazpacho</a> and <a href="https://jyotirecipe.pages.dev/classic-tomato-soup-recipe/">creamy tomato soup</a>. As the temperature finally calms down, I implore you to make this soup with the last ripe bell peppers and tomatoes.</p>



<p>This lovely, light soup is slightly spicy. It tastes more strongly of <a href="https://jyotirecipe.pages.dev/roasted-red-peppers-recipe/">roasted red peppers</a> than tomatoes, and the light smokiness brings Spanish cuisine to mind. It&rsquo;s vegan as written, though you certainly add cream for a creamier soup. Perhaps the best thing about this soup is that it freezes well for later.</p>

<p>I originally shared this recipe over ten years ago on a rainy day with <a href="https://jyotirecipe.pages.dev/in-loving-memory-cookie/">my dog, Cookie,</a> by my side. It&rsquo;s still one of my favorites, and revisiting it brings those moments back to life. I really miss my pup.</p>



<p>We&rsquo;re growing both peppers and tomatoes in our backyard garden this year, though not enough to make a proper batch of this soup. Grace&rsquo;s favorite thing to do is, &ldquo;Pick some &rsquo;matoes,&rdquo; and she checks for more cherry tomatoes at least twice a day. She pops them straight into her mouth and can&rsquo;t get enough.</p>

<p><strong>This pesto pasta salad is destined for your next gathering.</strong> Or at least, that&rsquo;s what I hope! This recipe is light and so fresh. It&rsquo;s perfect for parties, picnics and weeknight dinners, from spring through fall. Leftovers keep well for lunch, too.</p>



<p>Pesto and pasta are the stars of this show, naturally. To take it from <a href="https://jyotirecipe.pages.dev/pesto-pasta/">pesto pasta</a> to a true pasta <em>salad,</em> I added a pint of cherry tomatoes, a few handfuls of fresh arugula, and some cheese. I love salty feta in this recipe, though mozzarella and Parmesan are also great.</p>

<p>This pasta salad recipe includes <a href="https://jyotirecipe.pages.dev/how-to-make-basil-pesto/" rel="">homemade pesto</a> made with a few little twists. Instead of pine nuts, I opted for more affordable pepitas (green pumpkin seeds). You can use pine nuts if you&rsquo;d rather&mdash;or even walnuts or pecans.</p>



<p>I like to use half fresh basil and half fresh parsley, which tastes even more interesting and also cuts down on costs (buying lots of fresh basil can be expensive). You could certainly use all basil if you have an abundance growing in your garden. I also add some fresh lemon juice to brighten up the dish. Give it a try!</p>

<p><strong>Y&rsquo;all know I&rsquo;m from Oklahoma, right?</strong> I grew up eating cowboy caviar, also called Texas caviar. It&rsquo;s a classic bean salad recipe popular in the South. You can serve it as a side salad or as salsa. Either way, people go crazy for cowboy caviar at potlucks.</p>



<p>Cowboy caviar is made with black-eyed peas and black beans, chopped tomatoes, corn, bell pepper, onion and cilantro tossed in tangy Italian dressing. I typically think of cowboy caviar as a warm weather salad, but it&rsquo;s made with ingredients that are readily available year-round.</p>



<p><strong>Cowboy caviar is actually perfect for New Year&rsquo;s</strong> if you&rsquo;re craving something fresh yet hearty, and trying to hit your black-eyed pea quota!</p>

<p><strong>I have one issue with most cowboy caviar recipes</strong>&mdash;they&rsquo;re often swimming in store-bought Italian salad dressing. As such, they can be way too oily and contain some unnecessary preservatives. Instead, I whisked together a simple, <a href="https://jyotirecipe.pages.dev/italian-dressing-recipe/">homemade Italian dressing</a> from scratch. It&rsquo;s easy to do and tastes fantastic.</p>



<p>This recipe yields a big bowl of dip, but I don&rsquo;t think you&rsquo;ll have any trouble polishing it off. I hope you enjoy this cheekily titled delight!</p>
