Honestly, I like this version even better! It tastes fresh, flavorful and nicely spiced. Sometimes Chipotle&rsquo;s sofritas are <em>so</em> spicy that they overwhelm the other flavors in my bowl.</p>

<h2 class="wp-block-heading" id="h-tips-for-irresistibly-crispy-tofu">Tips for Irresistibly Crispy Tofu</h2>



<h3 class="wp-block-heading return" id="h-1-choose-the-right-kind-of-tofu">1) Choose the right kind of tofu.</h3>



<p>Extra-firm tofu is the only way to go, and I&rsquo;ve found that the Trader Joe&rsquo;s brand is the most firm of them all (plus, it&rsquo;s only two dollars). It&rsquo;s organic, too, which is important when you&rsquo;re buying tofu because soy is conventionally treated with <a href="https://www.soyconnection.com/newsletters/soy-connection/health-nutrition/articles/biotech-conventional-organic-agricultural-systems-compared" target="_blank" rel="noopener noreferrer">fertilizers, herbicides and insecticides</a>. Look for tofu in the refrigerated section by the produce.</p>



<h3 class="wp-block-heading return" id="h-2-squeeze-out-as-much-moisture-as-possible">2) Squeeze out as much moisture as possible.</h3>



<p>Water-logged tofu never gets super crispy. The key here is to slice the tofu into pieces before pressing it. Have you ever tried pressing a whole block, or even two halves? They just sit in soggy puddles. Slice them into smaller pieces to maximize the surface area. Press those, and you&rsquo;ll extract more moisture&mdash;faster, too.</p>

This recipe features a few staple Asian ingredients, but it&rsquo;s not one you&rsquo;ll find on a takeout menu.</p>



<p>Have you made this recipe already, by chance? It&rsquo;s one of my favorites from four years ago, but I was afraid the photos weren&rsquo;t doing it justice. Over the weekend, it got some new beauty shots, and I&rsquo;m sharing it again with some new notes!</p>

<p>This dish reminds me of one of the Annie&rsquo;s frozen meals that I used to take into my office job when I was starting this blog, the broccoli teriyaki one. Maybe you know it. This is its homemade counterpart, which would coincidentally pack great for an office lunch.</p>



<p>While this recipe requires making several components, I love how the recipe comes together. You can bake the Brussels and the tofu in the oven at the same time, which might seem complicated at first glance, but it&rsquo;s absolutely not! While those bake, the rice and glaze will be simmering on the stove. Then, it&rsquo;s assembly time and dinner time.</p>



<p>In fact, I love this recipe so much that it inspired one of the recipes in my cookbook&mdash;the&nbsp;Roasted Broccoli, Bell Pepper, and Tofu Bowl with Peanut Sauce on page 175. I get hungry just looking at its photo. So good!</p>

<p>I experienced my first fresh spring roll at a Thai restaurant last summer. I was on a date of sorts, or as much of a date as dates go these days. He had a habit of ordering appetizers or desserts without consulting me first&mdash;a habit I might find infuriating in someone else. He stuck with vegetarian options for my sake, though, and I didn&rsquo;t mind.</p>



<p>Anyway, <a href="https://jyotirecipe.pages.dev/fresh-spring-rolls-recipe/">fresh spring rolls</a> arrived at the table that afternoon, and I didn&rsquo;t know what to think at first. Their oddly translucent skins made them look almost alien-like, but I saw familiar, friendly herbs and vegetables peeking through at me and trusted that I&rsquo;d like them. We each dunked a roll in spicy sauce and, in between bites, drifted back into conversation about our usual topics of discussion: pirates, Halloween costumes, our dogs. Pure nonsense.</p>

<p>I&rsquo;ve wanted to make fresh spring rolls since that afternoon, but I couldn&rsquo;t find the wrapping papers for the longest time and wasn&rsquo;t sure what to do with them even after I finally found some. (By the way, spring roll wrappers are also called rice paper wrappers.) Then I watched my friend Erin make them in a video, and she made it look easy. Something about watching cooking techniques in action makes them seem more approachable.</p>



<p>I ended up working on this recipe all week&mdash;running out of natural light one day, waiting on the internet installation guy the next, sampling different combinations of filling ingredients in the meantime.</p>
