<p><strong>Let&rsquo;s talk about spaghetti squash for a minute.</strong> I&rsquo;m working on a fun stuffed spaghetti squash recipe for fall. I noticed that there are quite a few different ways that people suggest cooking spaghetti squash.</p>



<p><em>Here are the suggested methods:</em></p>



<ul class="wp-block-list">
<li>Baked or microwaved whole</li>



<li>Steamed in a pan of water in the oven</li>



<li>Sliced into rings and baked</li>



<li>Halved lengthwise or crosswise, baked cut-side up or down</li>

<p>Sure, all of those options will work, but <strong>I have a strong preference for one method.</strong> My preferred method reduces the amount of moisture in the squash and yields golden, caramelized edges that add extra flavor.</p>



<p><strong>Here&rsquo;s my trick:</strong> Cut the spaghetti squash in half from the stem end to the base, rub the inside lightly with olive oil, and roast it cut-side down on a baking sheet. There&rsquo;s a little more to it (see the recipe below), but that&rsquo;s the gist.</p>



<p><strong>Easy, right?</strong> No fuss, no mush, just tender and delicious spaghetti squash! This way, the moisture pools on the pan instead of collecting inside the spaghetti squash, and you end up with a perfect built-in bowl that you can load up with toppings.</p>

<p>I&rsquo;ve always been skeptical about treating spaghetti squash like regular spaghetti. It does go well with marinara sauce, though, <em>especially</em> when it&rsquo;s stuffed with garlicky saut&eacute;ed spinach and topped with golden mozzarella.</p>

<p>I came up with this idea when I had a bunch of leftover cooked spaghetti squash. I had spinach in the fridge and marinara in the pantry, so it was meant to be. I wasn&rsquo;t sure what to call these cheesy babes. Garlicky spinach spaghetti squash boats was a mouthful, so we settled on pizza bowls. Who doesn&rsquo;t love pizza?</p>



<p>Unlike delivery pizza, these &ldquo;bowls&rdquo; offer extra servings of vegetables and greens. The spaghetti squash contains lots of fiber, so this would be an excellent meal to serve the guy who claims that vegetarian dinners never fill him up. Like my brother, but I love him anyway.</p>

<p>The first day of fall slipped by me unnoticed last week. I did, however, notice the spaghetti squash at the grocery store. It was a full stop, dramatic, no-way moment when I saw it. &ldquo;Fall, are you here already?&rdquo; I glanced around and saw apples and sweet potatoes on display. Then I looked down at my shorts and sandals. &ldquo;Why is it still so hot outside?!&rdquo;</p>

<p>I tossed a spaghetti squash in my basket, went home and created version 1.0 of this recipe. It&rsquo;s a fun one to make. The bright colors! Those bold flavors!</p>



<p>This recipe was inspired by last year&rsquo;s super popular <a href="https://jyotirecipe.pages.dev/spaghetti-squash-burrito-bowl-recipe/">spaghetti squash burrito bowls</a>, which starts with <a href="https://jyotirecipe.pages.dev/how-to-cook-spaghetti-squash/">perfectly cooked spaghetti squash</a>. Instead of Mexican flavors, I opted for Mediterranean&mdash;chickpeas, basil and parsley, red onion and fresh pesto. I hope you all love it just as much as the original.</p>



<p>I caught a fall chill in the air yesterday evening on my walk with Cookie, and I am so excited about the fall line-up I have planned for you. Let&rsquo;s hear it for scarf weather and spaghetti squash!</p>

<p>Basically, all you do is <a href="https://jyotirecipe.pages.dev/how-to-cook-spaghetti-squash/">roast some spaghetti squash</a> until it&rsquo;s tender and caramelized on the edges. While the squash is in the oven, you&rsquo;ll have plenty of time to toss together a simple, colorful red cabbage slaw. It has lots of lime and some black beans for protein. Then, blend up some salsa verde with avocado for a creamy sauce that completes the dish.</p>



<p>These bowls are so simple and crazy delicious that I almost saved them for <a href="https://jyotirecipe.pages.dev/love-real-food-cookbook/">my cookbook</a>, but I just couldn&rsquo;t wait. Make them for dinner tonight?</p>
