<p><strong>These hearty bowls feature roasted fajita veggies and halloumi cheese over beans and cilantro-lime rice.</strong> This recipe makes an amazing vegetarian dinner! I&rsquo;m so excited to share this recipe with you and hope the photos speak for themselves. This vibrant meal is almost too delicious for words to capture.</p>



<p><strong>The bowls are a <em>very</em> abstract take on Mexican fajitas,</strong> which typically feature strips of bell pepper and onion cooked with steak, served with tortillas and toppings on the side. These roasted fajita veggies offer similar flavor and texture.</p>



<p>Halloumi cheese hails from Cyprus, an island country in the Mediterranean&mdash;far, far away from Mexico! I love halloumi because it offers a salty, creamy, chewy and almost meat-like texture once roasted. I&rsquo;ve used it in place of bacon to make <a href="https://jyotirecipe.pages.dev/vegetarian-blt-sandwich-recipe/">vegetarian BLTs</a>. Conveniently, the veggies and cheese roast in the oven simultaneously on separate pans.</p>

<p>Homemade sushi <em>bowls</em> are the answer to my sushi-at-home conundrum. There&rsquo;s no rolling involved, which means they&rsquo;re much easier to make. You can get quite creative with your ingredients, too, since we&rsquo;re simply piling them on top rather than rolling them up. Best of all, these fresh but hearty bowls keep me fueled for hours.</p>

<p><strong>Most stuffed peppers are made with Italian seasonings, but I went in a different direction. </strong>I was inspired to incorporate some of my favorite Mexican ingredients, including pinto beans, cherry tomatoes, cilantro, lime, chili powder and cumin. The filling is so tasty, I could eat it as a side dish! These peppers are somewhat time consuming, but each element is simple to make.</p>

<p><strong>The trick to making great stuffed peppers</strong> is to slice the peppers in half from the stem end down through the base. Then, pre-roast the halves until they&rsquo;re tender and a bit caramelized at the sliced edges. This way, their flavor is condensed and their texture is just right&mdash;not too crisp, but not falling apart.</p>



<p><strong>Please do yourself a favor and cook extra brown rice while you&rsquo;re at it.</strong> Then, you&rsquo;ll be one step closer to dinner tomorrow night&mdash;say, <a href="https://jyotirecipe.pages.dev/vegetable-fried-rice-recipe/">Extra Veggie Fried Rice</a> or <a href="https://jyotirecipe.pages.dev/tag/rice/">any of these rice-based dishes</a>. <p>In fact, these burrito bowls represent how I eat at home. I like to make a few components that play nicely together, and mix and match them all week. That way, I don&rsquo;t get bored, and I don&rsquo;t have to start from zero with every meal.</p>

<p><strong>Chana masala is one of my favorite menu items at Indian restaurants.</strong> It&rsquo;s a hearty, saucy chickpea and tomato dish with warming spices. I bet you have the ingredients to make this easy homemade version in your pantry already!</p>



<p>I shared this recipe back in 2014, and wanted to revisit it as we&rsquo;re all spending more time at home. I thoroughly enjoyed the fragrant 20 minutes I spent over the stove for this recipe.</p>

<p>To make this chana masala, you&rsquo;ll need onion, ginger, garlic, and several good-for-you spices, including coriander, cumin, and turmeric. Garam masala is the traditional spice blend for chana masala, but if you don&rsquo;t have that on hand, you&rsquo;ll find alternatives below.</p>

<p>If you have this cilantro lime brown rice in the fridge, you can throw together a meal in a hurry. Add beans or cooked eggs, top with some salsa or guacamole, and you&rsquo;ll have a burrito bowl in ten minutes. If you have leftover greens or vegetables, this is the perfect way to use them up.</p>

<p>This cilantro lime brown rice is also a great side dish that will round out your Mexican-themed meals or anything that comes off your grill this summer. It starts with a base of <a href="https://jyotirecipe.pages.dev/perfect-brown-rice-recipe/" rel="">perfectly cooked brown rice</a>, a healthy whole grain. I often stir in a can of well-rinsed black beans for some extra protein.</p>

<p><strong>Repeat after me: No more mushy rice!</strong> No more mushy rice! I&rsquo;ve been using this brown rice cooking technique for years, and it never fails.</p>



<p><em>A few reasons to love this recipe:</em></p>



<ul class="wp-block-list">
<li>You don&rsquo;t need a rice cooker or any special equipment (just a pot with a lid, and a kitchen stove).</li>



<li>You can use this technique on any type of brown rice (long, medium or short grain, as long as it&rsquo;s not a quick-cooking variety).</li>



<li>It&rsquo;s so easy to remember, you&rsquo;ll never need to look up how to cook brown rice again.</li>
</ul>

<p><strong>For this technique, you&rsquo;ll boil your rice in an abundance of water for 30 minutes.</strong> Drain off the excess water, return the rice to the pot, cover, and let the rice steam for 10 minutes. Ta da! Perfect brown rice, every time.</p>



<p>I originally found this technique on <a href="https://www.saveur.com/perfect-brown-rice-recipe" target="_blank" rel="noopener noreferrer">Saveur</a>, and I&rsquo;m so thankful I did. Their recipe calls for 12 cups of water (that&rsquo;s a lot) per cup of rice, and I&rsquo;ve learned that it really only needs 6 cups.</p>



<p>However, <em>you don&rsquo;t actually have to measure the water</em> as long as you&rsquo;re using a large enough pot. If too much water evaporates during the cooking process, just add more and return the water to a boil. Your rice will still turn out perfectly!</p>

<p>Mujadara is served across the Middle East in various forms and goes by differing names, depending on where you are. It has many spelling variations: mujadarra, mujadarah, majadra, mejadra, moujadara, mudardara, and megadarra.</p>

<p>Mujadara is a seriously inexpensive vegetarian meal that would make a statement at your next get-together.</p>



<p>It&rsquo;s also special diet-friendly, since it&rsquo;s gluten free and easily vegan/dairy free (simply serve <a href="https://jyotirecipe.pages.dev/best-hummus-recipe/">hummus</a> or <a href="https://jyotirecipe.pages.dev/best-tahini-sauce-recipe/">tahini sauce</a> on the side instead of yogurt).</p>
