<p>I love making nostalgic treats like these with our four-year-old. She&rsquo;s always eager to stir, scoop, and lick the spoon, of course. (Parents, I&rsquo;ve just learned that mini eggs are a choking hazard for kids ages four and younger, so these nests are a better option for bigger kids.)</p>

<p>I first encountered pistachio milk in the alternative milk section at Whole Foods, offered by a brand called <a href="https://www.threetrees.com/organic-unsweetened-pistachiomilk">Three Trees</a>. As a pistachio lover, I had to try it immediately. I loved it, naturally, so I had to try making it myself.</p>

<p><strong>This watermelon salad was inspired by one we tasted in Tampa last summer.</strong> I loved the pistachios sprinkled on top. They offered the perfect crunch, and the green color contrasted beautifully with the bright red watermelon.</p>

<p><strong>I first tasted pistachio butter</strong> when we visited an <a href="https://ottolenghi.co.uk/restaurants/chelsea" target="_blank" rel="noopener">Ottolenghi restaurant</a> in London last year. I was so excited and wanted to try everything, so I brought a collection of shelf-stable treats back home with us. They had tiny jars of sweetened, spiced pistachio butter&mdash;I don&rsquo;t know what they called it, exactly&mdash;but it piqued my interest.</p>

<p>This salad was inspired by the beet salads at my favorite local French restaurants, <a href="https://westportcafeandbar.com/" target="_blank" rel="noopener">Westport Caf&eacute;</a> and <a href="https://frenchmarketkc.com/" target="_blank" rel="noopener">French Market</a>. Over the past year, I&rsquo;ve really missed sipping wine in their establishments and soaking up their vibes. You should know that I&rsquo;m constantly daydreaming of a French vacation.</p>



<p>Both restaurants offer beet salads with pistachios and goat cheese, yet they each have their own unique spin on the combination. I always order the beet salad and French fries, naturally!</p>

<p>This recipe incorporates <a href="https://jyotirecipe.pages.dev/perfect-roasted-beets/">my go-to method for roasting beets</a>, which yields amazing flavor. I used arugula as the base, which contrasts nicely with the earthy flavor of the beets.</p>



<p>Then I added goat cheese and pistachios, plus some radish and green onion for extra freshness and some crunch. The zippy, Dijon-forward vinaigrette brings it all together. Serve this salad as a side dish or enjoy a large portion for a satisfying but light dinner.</p>

<p><strong>Meet the ultimate plum dessert!</strong> This plum crisp recipe has been one of my favorite summertime desserts for over ten years. I&rsquo;m sharing it again today with fresh photos because the originals didn&rsquo;t do the recipe justice. </p>



<p>This concept came to be when my friends dropped off a big bag of fresh plums from the plum tree in their front yard. After much debate on what to do with my surplus, I settled on my default fruity dessert: a crisp. Fruit crisps are my favorite because they&rsquo;re easy to make (no mixer, no fuss) and a guaranteed delight. They&rsquo;re the perfect low-key project for a summer afternoon.</p>



<p>I finished my honey-sweetened plum crisp with my go-to topping, which is made from oats and almond flour instead of regular flour. It&rsquo;s tender, nutty and irresistible, and I love that I can share it with my gluten-free friends. I added some pistachios, too. They taste fantastic, and their green color contrasts beautifully with the dish&rsquo;s vibrant fuchsia interior.</p>
