<p><strong>These energy balls are lifesavers!</strong> When you&rsquo;re hungry in between meals, running out the door without breakfast, or craving a wholesome little treat, these energy balls will come to the rescue. They&rsquo;re the perfect healthy grab-and-go snack.</p>



<p>This recipe is made with oats, honey, nut butter, and toasted nuts and seeds, though it&rsquo;s endlessly adaptable to suit your preferences. I designed it to offer sustained energy from the whole grains and nuts. One ball is just sweet enough to taste like a treat, and offers a healthy dose of protein and fiber. </p>



<p>This recipe was inspired by my husband&rsquo;s mom&rsquo;s interpretation of my <a href="https://jyotirecipe.pages.dev/best-granola-bars-recipe/">no-bake granola bars</a>. She always has a batch in the fridge for her grandkids, and they&rsquo;ve become a staple in our house, too. I crumbled one over my yogurt just this morning, and they&rsquo;ve kept my energy level up through this postpartum phase. They&rsquo;re a perfect homemade gift for anyone who&rsquo;s in a busy season of life, that&rsquo;s for sure.</p>

<p><strong>These chocolate crispy bars are a modern, abstract rendition of scotcheroos&mdash;</strong>the treats printed on Rice Krispies boxes in the 1960s. If you squint a little bit, the pecans might remind you of butterscotch.</p>



<p>You could call these sort-of scotcheroos, or mostly-naturally-sweetened scotcheroos, or just plain delicious. Somehow, I landed on Chocolate Peanut Butter Crispy Bars.</p>

<p>I always get a hankering for Reese&rsquo;s peanut butter eggs around Easter time. They&rsquo;re my favorite. This crispy-crackly, honey-sweetened, peanut butter-and-chocolate recipe is fully satisfying my Reese&rsquo;s craving.</p>

<p>Oats make these cookies more hearty than most. In fact, oats are the only structure this flourless cookie recipe needs. As long as your oats are certified gluten free, these cookies will be, too.</p>



<p>These cookies are easy to make, too. You don&rsquo;t need to soften your butter first (just melt it). You don&rsquo;t need to pull out a heavy stand mixer (your hand mixer or some elbow grease will work great). And, you&rsquo;ll only need one mixing bowl. Winning!</p>



<p><strong>More than any other merit, though, these peanut butter cookies are <em>delicious</em>.</strong> They&rsquo;re cookies and that&rsquo;s what cookies should be, right?</p>

<p><strong>My now-husband asked me out for spring rolls and beer for our first date.</strong> I vividly remember walking into the nearby Thai restaurant to meet him. Our waitress had to come back three times to get our order, since we could not be bothered to look at the menu.</p>



<p>We were too busy connecting over our love for our dogs (we each have one), coming from families of three kids (I&rsquo;m the oldest; he&rsquo;s the youngest), our shared love of food and travel, a million other little things&hellip;</p>



<p>He finally ordered us a double batch of his favorite spring rolls. I was too nervous and full from a day of recipe testing to eat much. The waitress kicked us out because the restaurant was closing. I came home and danced around in the living room with Cookie. He asked me out again.</p>

<p>A couple of months later, I confessed that I didn&rsquo;t share his level of appreciation for those spring rolls. &ldquo;Too much noodles, not enough veggies. The carrots taste like chlorine. The peanut sauce could be more bold.&rdquo; He dared me to come up with something better, and I finally have.</p>



<p>These are the fresh, veggie-packed spring rolls I want to order at Thai and Vietnamese restaurants. I can&rsquo;t say they&rsquo;re 100 percent authentic, but they&rsquo;re pretty close.</p>



<p>Of course, I came up with an irresistible peanut dipping sauce to go with them. Invite some friends over and make it a spring roll party! Ready for the recipe?</p>

<p>This monster cookie recipe took me about eight tries (nine?) to get right, but they are <em>just right.</em></p>



<p>I almost gave up on them, to tell you the truth. My fella took a batch to work and overheard his coworker say, &ldquo;This is the best cookie I&rsquo;ve ever had,&rdquo; so I knew I was close.</p>



<p>Here they are, in time for a fun weekend baking project or holiday treat. Let&rsquo;s make some cookies!</p>

<p>This recipe can satisfy your main-meal cravings (it packs great for lunch), or it can make a statement side dish. It&rsquo;s easily made vegan and/or gluten free, making it an all-star potluck option.</p>



<p>This slaw is made with more vegetables than noodles, so it&rsquo;s nice and light. I tend to get snacky when I&rsquo;m feeling anxious or unsettled, so I&rsquo;ve been taking a fork to this slaw in those moments. Chomp chomp chomp!</p>
