<p><strong>Meet the ultimate zucchini side dish.</strong> It features caramelized zucchini and red onion with toasted sliced almonds, seasoned with fresh garlic and a squeeze of lemon juice. The flavors are bold, the dish is vibrant, and I&rsquo;m going to make this saut&eacute;ed zucchini all summer long. </p>



<p><strong>I don&rsquo;t always like cooked zucchini, but I <em>love</em> this recipe.</strong> Zucchini can be squeaky or mushy, and I often avoid it on restaurant menus for those reasons. Not this recipe! The zucchini is perfectly browned and tender throughout. </p>



<p><strong>The flavors in this recipe remind me of <a href="https://jyotirecipe.pages.dev/best-green-beans-recipe/" type="post" id="37563">green beans amandine</a>,</strong> if you&rsquo;re familiar&mdash;another one of my favorite veggie side dishes. Our friend Erika introduced us to this concept last summer in St. Louis. It paired beautifully with pasta and grilled options on their back porch. I asked her for the recipe afterward, and I&rsquo;m excited to share it with you today.</p>

They&rsquo;re 100 percent delicious, featuring perfectly tender insides and golden exteriors that offer a light crunch along the edges. Jammy burst blueberries, lemon zest and a light sprinkle of raw sugar take them to the next level!</p>



<p>I didn&rsquo;t come up with this idea myself. When I published my <a href="https://jyotirecipe.pages.dev/blueberry-scones/" type="post" id="45991">Blueberry Scones</a>, which are made with whole wheat or all-purpose flour, I received several questions about how to make the recipe with almond flour. </p>



<p>Since almond flour has become my favorite flour over the past year or two, I had to figure it out. Despite being made entirely with almond flour, the scones don&rsquo;t taste overtly of almond. They&rsquo;re easy to make with simple, wholesome, lower carbohydrate ingredients, so they&rsquo;re a win all around.</p>



<p><strong>It took seven tries to get the recipe just right.</strong> Along the way, it became the topping for a <a href="https://jyotirecipe.pages.dev/peach-cobbler/" type="post" id="46896">Peach Cobbler</a>. I&rsquo;m delighted with this recipe and all the variations you&rsquo;ll find below.    </p>

<p><strong>This recipe is easy to mix together with quality ingredients,</strong> and beats store-bought dressing by a mile. It features poppy seeds, of course, as well as fresh lemon juice and zest. It&rsquo;s sweetened with honey, which offers more flavor than plain sugar. Dijon mustard and a clove of garlic keep it interesting, and mayonnaise or Greek yogurt make it lightly creamy (your choice&mdash;mayonnaise offers a more luxurious texture, while yogurt lends a lovely tang). </p>

<p>Since I already changed one primary ingredient, I took the liberty of adding some chickpeas and feta cheese, more ingredients that you would not expect to find in tabbouleh. They&rsquo;re <em>entirely optional</em> and absolutely delicious. They make the salad more hearty; if you use both, it could qualify as a light meal on its own.</p>



<p><strong>This herbaceous salad is so refreshing on a warm day.</strong> It features fresh parsley and mint, tomato and cucumber, olive oil, lemon juice, garlic, and quinoa. The proportions remain true to the traditional recipe, so it contains more parsley than quinoa, and the lemon packs a punch. I think you&rsquo;ll love it. </p>

<p>The combination yields a special-occasion tart that is bright and decadent but not overwhelmingly so. Unlike a giant slice of cheesecake, this cheesecake tart has a low profile and reasonable proportions. </p>



<p>It took me <em>nine tries</em> to perfect this recipe, but it&rsquo;s an absolute winner&mdash;and it&rsquo;s straightforward to make! Trust me, you can do this.   </p>

<p><strong>Posset has been consumed in Britain for well over 600 years,</strong> <a href="https://britishfoodhistory.com/2012/04/28/possets/">though it was originally</a> a hot drink made from sweetened, curdled milk mixed with wine or ale. It was often served to help cure colds or fevers. The modern chilled citrus and cream version came to be in the twentieth century. Since the recipe is British, posset <a href="https://dictionary.cambridge.org/us/pronunciation/english/posset">is pronounced like &ldquo;pocket&rdquo;</a> but with an s.</p>



<p>I first attempted posset for <a href="https://jyotirecipe.pages.dev/love-real-food-cookbook/">my cookbook</a>, but I overcomplicated the recipe by trying to serve the posset like cheesecake squares over graham cracker crust. In hindsight, it&rsquo;s best served simply in small containers, and garnished as desired. Years later, my husband reminded me of posset after he made some on a whim after finding the concept on Instagram.</p>



<p>I pulled out my old notes and tweaked the amounts of cream to use one full pint, used just enough sugar so it&rsquo;s not too sweet, and specified the exact amounts of lemon zest and lemon juice rather than calling for two or three lemons, which always vary in size. To achieve a consistent consistency, I found a trick from America&rsquo;s Test Kitchen&mdash;we&rsquo;ll know the mixture is done simmering once it has reduced to two cups. <strong>This tested and perfected recipe is ready for your kitchen!</strong> </p>

<p>This recipe was inspired by a similar dip that I grabbed at Whole Foods before hosting girls&rsquo; night (Falafel King brand). A couple of my friends follow dairy-free diets, so I&rsquo;m always looking for fun options that satisfy our requirements. As the night went on, we all fell in love with this vegan dip&mdash;it&rsquo;s creamy, rich yet fresh, and satisfying. It&rsquo;s irresistible.</p>



<p>So, I combined my <a href="https://jyotirecipe.pages.dev/best-tahini-sauce-recipe/">Best Tahini Sauce</a> (truly the best) with the herbs from my <a href="https://jyotirecipe.pages.dev/easy-green-goddess-dressing-recipe/">Easy Green Goddess Dressing</a>, and here you have it. You can make this recipe with any combination of cilantro, parsley, basil, dill and/or mint. Add a small handful of fresh tarragon if you can find it for that characteristic green goddess flavor. This dip (or sauce) is lovely in any season. I hope you fall in love with it!</p>

<p>I always order a salad like this one when we eat at <a href="https://www.truefoodkitchen.com/" target="_blank" rel="noopener">True Foods Kitchen</a>. The main difference between this salad and the aforementioned kale salads is that this recipe omits the <a href="https://jyotirecipe.pages.dev/how-to-make-bread-crumbs/">bread crumbs</a>, though you can certainly add them if you wish. I tried with and without, and the bread crumbs didn&rsquo;t do a whole lot in terms of flavor and don&rsquo;t keep well on the salad for leftovers.</p>
