<p>You can get creative with leftover frittata&mdash;use a slice as a sandwich filling, or break it up for easy breakfast tacos.</p>

<p>Frittatas can be intimidating at first, but they&rsquo;re very easy to make <em>if</em> you know what you&rsquo;re doing. So today, I&rsquo;m sharing a comprehensive guide to making a perfect frittata, every time.</p>



<p>I&rsquo;ve been disappointed by traditional frittatas before, so I went back to the basics. I pitted America&rsquo;s Test Kitchen&rsquo;s frittata guidelines against Bon Appetit and Epicurious, and came up with my own go-to methods.</p>

<p>Can we take an informal poll today? How many of you all secretly or not-so-secretly love cold, gloomy winter days? On the contrary, how many of you are desperate for warm, sunny spring days?</p>



<p>I&rsquo;m firmly in the sunshine camp and generally assume that everyone else is in my camp, but my friend Mara lives for gray days. I don&rsquo;t get it. I really don&rsquo;t.</p>

<p>So, which side are you on? Either way, we&rsquo;re here in the tail end of winter. This is the season when I crave cheesy, carb-heavy warmth via comfort food.</p>



<p>My solution to surviving winter and fitting into my spring wardrobe when the time comes is not to deny myself what I want, but to pack as much veggies and greens into it as possible. They offer bulk and fiber, not to mention vitamins and extra flavors.</p>

<p>This frittata concept has been lurking in the back of my mind for months. I&rsquo;ve just been waiting for sweet potatoes and bell peppers to come around again. <p>When I&rsquo;m not too busy grumbling about self-imposed produce deprivation, I&rsquo;ll admit that eating seasonally really is the way to go&mdash;I&rsquo;m generally so busy getting my fill of cranberries in the winter that I don&rsquo;t have time to miss blueberries, and I&rsquo;m always scrambling to meet my butternut quota when spring rolls around, and oh, how I love those blood oranges in February that electrify dreary winter days. I appreciate them all the more thanks to their limited availability.</p>

<p>This weekend was full of parties and good cheer. It started with a bang on Friday, when my friends surprised me with a birthday party! I thought I was meeting one friend for dinner, but to my shock and delight, eight smiling faces were waiting for me when I arrived.</p>



<p>My birthday is on Christmas and I haven&rsquo;t had a proper birthday celebration in, oh, <em>almost a decade</em>, so it meant the world to me. I&rsquo;m actually looking forward to my real birthday now. And, now that I am no longer filled with Christmas baby bitterness, I might stop being a Scrooge and actually pull out some holiday decorations.</p>

<p>My friend <a href="https://saltedplains.com" target="_blank" rel="noopener noreferrer">Tessa</a> served her version of this quiche at girls&rsquo; night a couple of months ago. Two of the four of us are gluten-free, so we often serve simple, vegetarian frittatas that satisfy all four of us. (Add a bottle of wine, maybe a side salad and some chocolate for desert, and we&rsquo;ve made a gourmet meal with minimal effort.)</p>



<p>That night, Tessa included an almond meal crust, which turned her baked frittata into a quiche. I&rsquo;ve never been a big fan of all-purpose flour crusts, but this crisp, savory, herbed crust is another story. We all absolutely loved the flavor and texture of the crust and requested the recipe. The best part? You don&rsquo;t even need a rolling pin to make it. Just smush the crust into form with your fingers.</p>



<p>I&rsquo;ve been working on a larger scale version that can be baked in a cast iron skillet ever since. My final, favorite version starts with a garlicky thyme and almond meal crust, which is filled with scrambled eggs, goat cheese, mushrooms and arugula. It&rsquo;s fresh, filling and simple&mdash;perfect for a holiday brunch or a simple weeknight dinner.</p>

<p>I wish I had some stories to share today, but it&rsquo;s been an uneventful work week punctuated by our weekly Wednesday girls&rsquo; night (fajitas and Downton Abbey at my place). I can&rsquo;t complain. I finally found the time to try this baby spinach and sweet potato frittata that&rsquo;s been on my mind since I first flipped through <a href="https://www.amazon.com/gp/product/1607741148/ref=as_li_ss_tl?ie=UTF8&amp;camp=1789&amp;creative=390957&amp;creativeASIN=1607741148&amp;linkCode=as2&amp;tag=cooandkat-20" target="_blank" rel="nofollow noopener">The Sprouted Kitchen</a> cookbook this summer. It was absolutely worth the wait&mdash;a simple breakfast or dinner that only requires a cutting board, a knife, a mixing bowl and a skillet to prepare. I just had to share it with you today so you can make it this weekend.</p>

<p>Frittatas are one of those meals that, if you know how to make, are a kitchen standby. As long as you have eggs, a splash of milk and some vegetables, you can whip up a pretty satisfying meal without much prep or cooking time. I&rsquo;ve finally gotten the hang of the cook-on-the-stove-and-finish-in-the-oven method (the trick is to pay attention to visual cues and learn to make it by feel), but I&rsquo;m also a fan of <a href="https://jyotirecipe.pages.dev/baked-frittata/">this oven-only method</a>. It&rsquo;s great when I&rsquo;m in a time crunch or need to keep the burners open for other things. I made a frittata that way for the girls&rsquo; night before last, which kept the stove clear for two skillets&rsquo; worth of <a href="https://jyotirecipe.pages.dev/banana-oat-pancakes/">banana oat pancakes</a>. Do use the skillet method for this sweet potato frittata, though, so the sweet potatoes can develop those irresistible caramelized edges.</p>



<p>My girls are all eating gluten-free these days, so I should mention that frittatas are, of course, gluten-free (unless you&rsquo;re adding grains) and the oat pancakes I mentioned are gluten-free as well. Happy bellies!</p>

<p>Frittatas: I love them. But before I read Stonesoup&rsquo;s <a href="https://thestonesoup.com/blog/2010/11/the-secret-to-a-perfect-frittata-5-ingredients/" target="_blank" rel="noopener">guide to the perfect frittata</a>, I was too intimidated to try making my own. I thought I&rsquo;d have to start cooking the eggs on the stove, try to flip the eggs without making a mess, move it all to the oven, and so forth.</p>



<p>Jules discovered that the best way to make frittatas is to simply bake them in the oven, which got me excited about making frittatas. I can scramble eggs and turn on the oven, so how hard can it be? Not at all, it turns out. Frittatas are the easiest egg dish around!</p>

<p>I reduced Jules&rsquo; recipe to its simplest form. You can make it your own and use the ingredients that you have on hand. Jules&rsquo; recipe called for a springform pan, which certainly works, but I&rsquo;ve since realized that a 9-inch square baking dish (<a href="https://jyotirecipe.pages.dev/baked-asparagus-frittata/">lined crosswise, like this</a>) works just as well.</p>
