<p>This recipe is redeeming, too&mdash;it&rsquo;s full of luscious roasted butternut squash, which amps up the golden hue without overwhelming the flavor. This mac and cheese is a real crowd pleaser. Our toddler loves it and so do we.</p>

<p>Butternut squash is naturally quite sweet. <strong>Roasted butternut squash is my favorite preparation</strong> because the edges caramelize against the pan, yielding delicious savory bits that help balance the sweetness.</p>



<p><strong>Roasted butternut makes a great side dish with a few garnishes on top,</strong> but it&rsquo;s more versatile than that. Over the years, I&rsquo;ve used it in risotto and soup, hearty fall and winter salads, and even tacos. Again, I love to contrast the sweetness with spicy and savory ingredients, and you&rsquo;ll find a list of suggestions below.</p>

<p>This homemade vegetable soup with quinoa is light but filling and packs great for lunch. Like most soups, it tastes even better the next day. Bonus? It freezes well, too. I love keeping my freezer stocked with hearty soups and defrosting one whenever I need a quick but nutritious meal.</p>



<p>This soup is vegan unless you want to top it with Parmesan cheese, which isn&rsquo;t a bad idea if you ask me. The ingredients list, while a little on the long side, includes mostly pantry items. Every single one of them is nutritious!</p>

<p>Minestrone was traditionally made to use up leftover vegetables, so feel free to <strong>use any seasonal vegetables and greens you have on hand.</strong> I used potatoes and spinach for the soup you see here, and it was absolutely delicious.</p>

<p>I listed some alternatives in the recipe, including yellow squash, zucchini, butternut squash, green beans or peas. That means that you can make seasonal minestrone on cool days from fall through spring!</p>



<p>I used canned beans here instead of cooking my own, which cuts the cooking time down to a reasonable weeknight level. The remaining ingredients are basic pantry items, including canned tomatoes, pasta, basic spices and onions.</p>

<p>I hope you had a wonderful Thanksgiving! This recipe is one that we had to cut from <a href="https://jyotirecipe.pages.dev/love-real-food-cookbook/">my cookbook</a> due to space constraints, but it&rsquo;s too good to keep from you. It was inspired by two delicious experiences with polenta, or grits, if you&rsquo;d rather. They&rsquo;re basically the same thing.</p>



<p>The first was a polenta bowl at a farm-to-table restaurant in Omaha called Kitchen Table. My bowl looked pretty similar to what you see here, but with a poached egg. The second was at my cousin&rsquo;s wedding shower, where I found grits generously swirled with cheddar cheese, green chilis and melted butter.</p>

<p>This combination is a homemade version of Kitchen Table&rsquo;s bowl with Southwestern influences inspired by my cousin&rsquo;s grits. I cooked the polenta with bell pepper and stirred in some salsa verde to amp up the flavor. Then I stirred in just one tablespoon of butter and folded in crumbled goat cheese, making the polenta ultra creamy.</p>



<p>This is a versatile recipe that you can adjust to work with any vegetables in your drawer. I roasted my vegetables for maximum flavor, but you could choose to steam or saut&eacute; them instead. You can also play around with the cheese (cheddar or Parmesan would be great), and you can prepare your eggs however you&rsquo;d like. Lightly saut&eacute;ed greens would be nice, too.</p>

<p><strong>Risotto with oats? Yes!</strong> I&rsquo;d be skeptical if I were you, but let me tell you&mdash;I&rsquo;m pleasantly surprised by how much I love this twist on risotto. Traditional risotto is time consuming, rich and delicious, but doesn&rsquo;t have much to offer in the nutrition department.</p>



<p>I&rsquo;ve learned how to make a <a href="https://jyotirecipe.pages.dev/roasted-butternut-squash-risotto/">baked version</a> with brown rice and lots of vegetables, but it still takes a little too much time to qualify as an easy weeknight meal.</p>

<p>Enter steel-cut oat risotto! Also known as, another way to use those steel-cut oats in your pantry, for something other than <a href="https://jyotirecipe.pages.dev/perfect-steel-cut-oats-recipe/">steel-cut oatmeal</a>. Like arborio rice, steel-cut oats get nice and creamy when cooked.</p>



<p>Unlike brown arborio rice, steel-cut oats require about 25 minutes on the stove, with minimal fuss. Steel-cut oats are 100% whole grain and are a good source of fiber, so this risotto will stick with you.</p>

<p>For these tacos, I drew inspiration from <a href="https://jyotirecipe.pages.dev/sweet-potato-black-bean-tacos/">my sweet potato tacos</a> and roasted up some cubed butternut squash instead (sweet potatoes would be awesome here, too!). I actually cheated, for once, and used two bags of pre-cut squash from Trader Joe&rsquo;s. I think I&rsquo;ll do it again soon.</p>



<p>While the squash roasts in the oven, just mix up some simple cabbage and black bean slaw (a riff on the slaw used in <a href="https://jyotirecipe.pages.dev/spaghetti-squash-burrito-bowl-recipe/">my spaghetti squash burrito bowls</a>) and mash up some guacamole. I have finally learned that mashing guacamole with a pastry cutter or potato masher works way better than a dinky fork. Hallelujah! Hope you love these.
