<p><strong>I love granola, and this grain-free granola is no exception.</strong> Most granola recipes are oat-based, but this one is oat-free. Regardless, it offers a sweet, nutty crunch that&rsquo;s reminiscent of <a href="https://jyotirecipe.pages.dev/healthy-granola-recipe/" type="post" id="17911">my most popular granola recipe</a>. Like any good granola, it&rsquo;s irresistible.</p>



<p><strong>When I first heard of grain-free granola, I was perplexed by the concept.</strong> I&rsquo;m a big fan of oats and whole grains, of course, and I still am. Unfortunately, I was forced to become more carb-conscious while I was pregnant to manage my blood sugar (gestational diabetes is zero fun). </p>



<p><strong>This grain-free granola livened up my breakfasts and snacks during that time</strong>. It&rsquo;s a kitchen staple for me to this day, and I&rsquo;m always sad to run out of my most recent batch. I found the original recipe in a book by dietitian <a href="https://lilynicholsrdn.com/" type="link" id="https://lilynicholsrdn.com/">Lily Nichols</a> called <a href="https://amzlink.to/az0smECc6uQK8" type="link" id="https://amzlink.to/az0smECc6uQK8">Real Food for Pregnancy</a>. I couldn&rsquo;t help but play around with it, so I&rsquo;m sharing my version and some fun options with you today.</p>

<p><strong>Meet the ultimate zucchini side dish.</strong> It features caramelized zucchini and red onion with toasted sliced almonds, seasoned with fresh garlic and a squeeze of lemon juice. The flavors are bold, the dish is vibrant, and I&rsquo;m going to make this saut&eacute;ed zucchini all summer long. </p>



<p><strong>I don&rsquo;t always like cooked zucchini, but I <em>love</em> this recipe.</strong> Zucchini can be squeaky or mushy, and I often avoid it on restaurant menus for those reasons. Not this recipe! The zucchini is perfectly browned and tender throughout. </p>



<p><strong>The flavors in this recipe remind me of <a href="https://jyotirecipe.pages.dev/best-green-beans-recipe/" type="post" id="37563">green beans amandine</a>,</strong> if you&rsquo;re familiar&mdash;another one of my favorite veggie side dishes. Our friend Erika introduced us to this concept last summer in St. Louis. It paired beautifully with pasta and grilled options on their back porch. I asked her for the recipe afterward, and I&rsquo;m excited to share it with you today.</p>

They taste similar to Bark Thins, if you&rsquo;ve tried their nutty options. Add a sprinkle of crushed green pistachio and flaky salt for extra flavor and a more realistic nest look!</p>



<p>These gourmet nests are easy to make. Once you&rsquo;ve gathered your ingredients, you can make a dozen in under 20 minutes (including 10 minutes in the refrigerator). I know these nests will become a tradition at our <a href="https://jyotirecipe.pages.dev/50-vegetarian-easter-recipes/" type="post" id="22786">Easter brunch</a>.</p>



<p>I love making nostalgic treats like these with our four-year-old. She&rsquo;s always eager to stir, scoop, and lick the spoon, of course. (Parents, I&rsquo;ve just learned that mini eggs are a choking hazard for kids ages four and younger, so these nests are a better option for bigger kids.)</p>

<p>This recipe is made with oats, honey, nut butter, and toasted nuts and seeds, though it&rsquo;s endlessly adaptable to suit your preferences. I designed it to offer sustained energy from the whole grains and nuts. One ball is just sweet enough to taste like a treat, and offers a healthy dose of protein and fiber. </p>



<p>This recipe was inspired by my husband&rsquo;s mom&rsquo;s interpretation of my <a href="https://jyotirecipe.pages.dev/best-granola-bars-recipe/">no-bake granola bars</a>. She always has a batch in the fridge for her grandkids, and they&rsquo;ve become a staple in our house, too. I crumbled one over my yogurt just this morning, and they&rsquo;ve kept my energy level up through this postpartum phase. They&rsquo;re a perfect homemade gift for anyone who&rsquo;s in a busy season of life, that&rsquo;s for sure.</p>

It&rsquo;s just as lovely as the regular kind.</p>



<p><strong>As much as I appreciate traditional pesto made with basil, arugula pesto has a few advantages.</strong> For one, it offers an interesting twist on a familiar flavor profile. It&rsquo;s also less expensive&mdash;buying fresh basil can add up at the grocery store. Year-round, it&rsquo;s generally easier to find good arugula than basil. Lastly, arugula pesto doesn&rsquo;t turn brown on the top like basil pesto can (no blanching required). </p>

<p><strong>As a bonus, this crisp is a healthier option than most others.</strong> I replaced half of the butter with yogurt, which gives it an awesome, faint tang. It also has less sugar in it than most, because ripe, juicy peaches are plenty sweet as is. Frozen peaches are not nearly as nice.</p>



<p><strong>Peach season is in full swing,</strong> so load up the cart with fresh peaches while you still can. Enjoy the leftovers for breakfast with Greek yogurt. You can&rsquo;t beat that!</p>

<p>I hope this recipe title caught your attention, because these green beans will be the standout on any plate. I have to stop myself from eating the whole pan myself, and I never thought I&rsquo;d say that. Give me the choice between this dish and <a href="https://jyotirecipe.pages.dev/homemade-green-bean-casserole/">green bean casserole</a>, and there&rsquo;s no contest. Green beans amandine for the win.</p>



<p>This side dish is simple enough for weeknight dinners, but fancy enough for the holidays. I wrote the recipe to yield enough for about four people. You can very easily double the recipe for a crowd as long as you use a Dutch oven to contain the beans.</p>

<p><strong>Haricots verts amandine translates to &ldquo;almond green beans.&rdquo;</strong> It&rsquo;s often anglicized to &ldquo;green beans amandine,&rdquo; which then mistakenly turns into &ldquo;green beans almondine.&rdquo; I can see why, but I attended too many years of French class not to point this out!</p>



<p>I can&rsquo;t say I remember eating these green beans during my semester in Bordeaux, France. Just one more excuse to go back when we can. I&rsquo;ve tested these ingredients and techniques over and over again so you can enjoy this dish at home.</p>



<p>You won&rsquo;t need to bother blanching the green beans&mdash;this dish magically comes together in one skillet. The recipe requires a bit of patience and some stirring, but it&rsquo;s 100 percent worth the effort. Keep this recipe handy, because it goes with just about everything!</p>

So, I combined all of the elements I&rsquo;ve enjoyed over the years to create my own &ldquo;ultimate&rdquo; veggie pizza recipe. This is the best homemade veggie pizza I&rsquo;ve ever had, and I hope you&rsquo;ll say the same!</p>



<p><strong>This vegetarian pizza recipe will delight vegetarians and carnivores alike.</strong> It&rsquo;s fresh and full of flavor, featuring cherry tomatoes, artichoke, bell pepper, olives, red onion and some hidden (and optional) baby spinach. You&rsquo;ll find a base of rich tomato sauce and golden, bubbling mozzarella underneath, of course.</p>
