It takes 45 min, but all you have to do is put the potatoes in the oven, the rice on the stove, and set a timer. I cover the potatoes with a little olive oil, salt and pepper before baking. I set out pre-made pico de gallo, guacamole, sour cream, and shredded Mexican cheese so everyone can make their own bowl. Such a crowd pleaser!
