Tonight I made these tostadas… wow! So simple and flavorful. And it looks great too. Nice as a stand alone meal or on a buffet or potluck. I had to search for 100% corn tortillas, they came out so crispy! I never made tostadas before… As I can’t eat much raw onion, I roasted a whole shallot with the potatoes and that was delicious on the salad.
I made only one meal for 2 people, used half of ingredients and worked fine.
