I have been trying to eat less meat and find more vegetarian recipes and this was a win! I couldn’t find pepitas at our grocery so I had to do without those, but I just made a homemade guacamole instead to top it off with. The texture and taste of the whole taco was so complete with balanced flavors and so filling! Highly recommend.

My husband raved about how delicious it was after the first bite in! He is vegan, so I substituted the feta for vegan coleslaw. Also, I wanted a little smokiness, so I substituted 1 tsp of smoked paprika for the chili powder in the beans. I definitely see these tasty tacos on repeat in my near future!
