I just made this but it’s super thick like tomato paste. I’ll need to thin it out to dressing consistency, but I don’t want to add more oil. Any suggestions for something to thin it out that won’t add a lot of fat and calories or cause it to separate like water? Thanks!

I don’t think it will freeze well, especially the croutons would likely get soft. However, I can’t say for sure without trying it. They both should keep well for a few days. Have fun on your trip!
