I had high hopes for this recipe. I like a hot savoury breakfast, and finding a recipe that isn&#039;t eggs or beans can be tough, and something nutritious even harder. So I had so many hopes, so many! 
Fulfilled! Absolutely delicious. I must admit, I had no butternut, so I used a popular Australian pumpkin called Kent, which is pumpkinier, sweeter, very orange, less creamy. So I added a little mushroom as well for some creaminess, and swapped the kale for spinach. A local Pinot Grigio worked pretty good. I cut the recipe by a third since I was only cooking for me, and it worked great to just third the quantities. I ended up using chicken stock, but the vegan kind, and skipped the salt, and instead of butter, I used some plant cream to make it creamier. I also added parsley with the lemon, and then mixed in hemp and chia for protein and fibre. Absolutely amazing. I can absolutely see myself eating this on the regular. I think poached chicken would be amazing with this, or garlic prawns, or fish, or even some bacon cooked into it. With broccoli, green beans and roasted capsicums and tomatoes would be stellar. With meatballs and mixed veg for dinner would be crazy good. I tried it without the parmesan before I added that, and honestly, I think it&#039;s delicious enough you could totally could go without. I&#039;m definitely making a bunch of different versions of this, and testing this on my family. Very filling, too, I cut to a third of the recipe and I could only eat half- so I can see how it reheats, too. Cheers mate, excellent recipe!]]></description>
