I love your recipes and I’ve been making this salad for quite some time now. I agree with Pam’s comment below, shaved is so good! I use Pecorino instead of Parmesan as I find the taste is better. Thank you for all you do and one of my favourite recipes to make of yours is the Roasted Eggplant Lasagne. I always make a batch to have on hand for mid-week dinners and of course, it goes well with this salad!

But Trader Joe’s is made with other additives while your recommended balsamic is pure and so nice!) I had baby spinach on hand so I made the most simple side salad imaginable: Spinach, olive oil, balsamic. It was perfect!!! I am sure you are correct that having this quick and easy dressing close at hand will lead me to eating more leafy greens like kale which is so healthy! I love arugula but I don’t always have arugula because its life is a bit shorter than other greens, and the taste is not too good when it’s not ultra-fresh. Any tips on holding arugula?
