Sweet potatoes aren’t my favorite, but they’re healthy and I had a bag. This recipe is perfect. They’re so good! Only thing I changed is, I didn’t have sour cream so I subbed cottage cheese. That was a very happy “mistake” because it really added a nice flavor. New face!

I never would have thought to make sweet potatoes savory in this way but they are excellent. I’m not the marshmallow type anyway but I just always associated sweet potatoes with “sweet.” It turns out when you add salt and some spices you get a wonderful blend of sweet and savory. And the garlic helps too. I put these in a bed under chicken with lentils which had its own sauce and that was divine. But they would also be nice with a pork loin and many other things.
