Love that there is no milk or cream yet it comes out thick and creamy! I went and bought carrots to make it, but then you know when you have good intentions and buy multiple bags of baby carrots and they start to get old and dry? Well, I doubled the recipe using them and have found a new great way to use them They did take longer to roast but taste was amazing. I made the ginger variation, it did need the squeeze of lemon and cracked black pepper you recommended. It is a keeper, already have shared the recipe with friends. Thank you!

Not a huge carrot fan usually, but had a bunch leftover and this soup was the perfect way to use them. I added about 2 Tbsp curry powder in with the sauteed onions and used chicken broth instead of vegetable. So creamy and satisfying. Will be making again and checking out Cookie and Kate’s other vegetable soup recipes!
