(I did my undergrad at the UMKC Conservatory and have always loved the town and its radically diverse restaurants.)

I was on concert tour last year Stateside and while in Puerto I noticed that some the “Abuelas” add a cube of sofrito sauce (previously cooked and frozen in an ices cube tray for future use) to their «habichuelas guisadas», a quasi-refried bean soup that is popular throughout the Caribbean.

As you cited, it’s only for those who like cilantro, but contingent on your sofrito recipe, the cilantro, culantro, tomatoes, Sazón, and achiotina in the sofrito sauce gives the refried beans a nuance of the islands and gently seduces the beans into a fantastic dip for thin, twice-fried plantain chips.

If I use the food processor, will it grind up the skins enough to be smooth? I have a swallowing issue and the skins are difficult for me.  Secondly, how does the red wine vinegar change the taste?
