Hi, they are probably french du puy lentils, that's if they are tiny and dark green. Or if they are small and black, they may be beluga lentils. Both take longer to cook as you describe, but they are soooo good.

I have a question regarding salt in the cooking if beans/legumes - I have leftover stock from cooking a homemade salt beef and it's got lovely spice flavours but also salty so i was thinking about a bean/pea soup but worried about the salt element. Can you offer advice/wisdom? Thank you

Pre-soaking also reduces the cooking time - which can save on washing up by allowing you to boil them together with pasta instead of in a separate pot!

in the article above it states the following under NOTES:

NOTES
STORAGE SUGGESTIONS: Leftover lentils will keep well in the refrigerator, covered, for 4 to 5 days. For longer storage, freeze leftover lentils for up to 6 months. Since lentils are somewhat delicate, it’s best to defrost them in the refrigerator. If you’re in a hurry you can gently microwave them, stirring often.

Hello- question.
I buy my lentils and beans at the dollar store. And have issues with them not cooking through in my crock pot even after many hours cooking. Can you provide suggestion how to get the brown lentils to cook properly so they don't have an inside crunch? Same happens with the beans even if soaked overnight. My lentils were home sprouted. but have done them w/o sprouting and same issue.

Oh no! It sounds like you had it going a bit too high. Did you use too large of pot that the water was more dispersed?

I was cooking a great lentil recipe with carrots and onions but I was inattentive and all the water boiled away and they were stuck to my pan. Any suggestions how to fix them? They did not taste as good as the last time I used that recipe. Thanks!
