Had fun making this with my 6 yo daughter. She says she wants it every night for dinner! …And that she wants to marry it. So she basically declared this a “marry me salad” without realizing that’s it’s actually a culinary thing. We almost ignored our other dinner dishes because we only had eyes for the salad. Loved the basil notes that shined through. Will probably add extra basil when we make it again tomorrow!

The flavors just danced – the salty pistachios and the fresh basil and the sweet peaches – yummm. Next time, I’d use fresh mozzerella balls to improve the cheese to peach ratio.
