Big hit with my small children as well. I only had 1.5lbs of eggplant from our CSA so I supplemented with summer squash and I found the combo worked really well (roasted the squash maybe 10 minutes less). I also doubled the pasta and we thought it was sufficiently saucy.

Also, I added cut up canned artichokes to the sauce, came out very well.

May I prepped the eggplant in the morning and it was so easy to assemble after work by just cooking the pasta and putting it all together. The eggplant folded into the pasta making the texture so perfect.

I doubled garlic and red pepper flakes to the marinara sauce and added 1/2 cup cottage cheese at blending for some added protein. I added some roasted celery and baby spinach to the pasta for some added veggies! Thank you for sharing your recipes!
