This recipe is very adaptable.
I used tahini instead of peanut butter (because that is what I had on hand).
Otherwise, I followed the recipe.
The results were delicious. I took them to a gathering and everyone enjoyed them.

Hi Janie, I haven't tested it, but you will need to reconstitute it or the level of moisture would be off. Mix 1 to 1.5 tablespoons of water for every tablespoon of powdered peanut butter. You are also losing some of the fat, so the texture might be a bit off. I hope this helps.

So since its 1 ¼ cups old-fashioned rolled oats, ground to oat flour, would it be just 1 cup of oat flour that I already have? I don't find the info in the link you shared very helpful for understanding the amount of oat flour for this recipe.

I just made your Maple PB Chocolate Chip cookies gluten & soy free. They are so yummy and simple to make! My DIL needs these two diet restrictions and I was looking for a dessert. I did add walnuts for my hubby. Thank you! Also I have made your Granola Bars and Pizza Crust using Spelt flour that I milled. Also delicious! I am not vegetarian but do believe veggies should be the star of every meal! I am sad to learn that you lost your sweet Cookie. I am sorry! It's great you have so many good memories.
