Made this for Thanksgiving as well as your savory sweet potato recipe (minus the green onion and parsley for the sake of the kids) and both were a hit! These will be my go to mashed potato recipes from now on. Thank you so much for sharing!!

In reply to Lori. Hi Lori, this recipe makes potatoes that are creamy and dense, not light and fluffy. Did you boil the potatoes until they were easily pierced through by a fork, about 10 to 15 minutes? If you cooked them as described in step 3, the baking after they come out of the refrigerator is just to warm them back up. I have reheated in my dutch oven, so the depth of the dish shouldn't make a big difference. It is possible that you overmixed them if they developed a gummy texture.

I have absolutely loved every recipe I have made of yours, Kate! For this recipe, I’m thinking I might have done something wrong. The potatoes came out more pasty and heavy than creamy. I followed the directions written and used full fat cream cheese (6 oz.) and sour cream. Used a potato masher and then a hand mixer as we like our potatoes smooth. I made them the day before and took them out of the refrigerator to sit for 30 minutes before baking the following day. After being in the oven for about 30 minutes they were not cooked through, so I took the lid off and continued to bake for about an additional 15 minutes. I’m not sure if I over mixed them or if I should have used a more shallow dish as the dish I used was round and the potatoes were filled to the top. Any helpful insight would be welcome as I’d like to try them again!

I made this recipe for our first Festive Party for the Holiday Season in 2024 and it was very good, everyone enjoyed it. But it was EVEN BETTER when we fried the leftovers for brunch the next day! Yum! Yum! Yum! By then the interesting cheesy flavours combined with the onion powder flavouring really came out. We know what to have for a Solstice Breakfast this year! OMG! I’m not normally a mashed potatoes gal but my son in law is cooking and I got the assignment so of course I said “yes.” I love your recipes so I knew it would be good- but man oh man you have won me over with this one. I loved that I could make it early since I’m bringing it a ways away, and I am 100% sure everyone else will love it too! Thank you!

This is the recipe my family uses as well, but without onion salt. Will have to give it a try this year! We got the recipe from family friends who will often reheat by baking with cheese and breadcrumbs on top – it’s fabulous!

Can I heat this up in a crock pot instead of the oven? How long do I heat it up for?
