I make it for lunch occasionally they are so tasty and quick to make. In addition to the olives tomatoes etc I give them a little bit of feta cheese crumbles and a sprinkle of a hot pepper. Gives it that little bit of tangy kick and adds to the Mediterranean flavor. Love it. Thank you for the idea and the other great recipes – quinoa tacos with avocado crema anyone!

I brought them to a party last year and all of friends love them. I will be making them again this week for a Christmas get together with my bridge group friends. We have several in our group with food issues, dairy, corn, wheat… It’s an age thing! Anyway, this was simple and easy to avoid all of these concerns and still serve something that was yummy and out of the ordinary. Thank you so much!
