Best way to convert to metric is to make the muffins as you normally do, but weigh each dry ingredient (and mashed bananas) as you make it. If the muffins work then you can use that weight in your recipe going forward. No converter needed. That’s what I do. Also - I made these using King Arthur Measure for Measure GF flour and it worked perfectly.

I have been making these muffins for years now and they never fail to delight. They are fabulous exactly as directed but there are so many variations that are so delicious, they are super fun to mess around with. I have non-stop company over July and August so I made two double batches today - one with dark chocolate chips and the other with walnuts and hemp hearts. Some batches had plain tops, some had oats sprinkled on them and others had cinnamon sprinkled on them. I have also recently been doing that little trick of putting them in a 425 oven for 5 minutes at the beginning to make the tops rise more. I mean, they rise a little more, but they are great even if you don't do this...or do what I did once and forget to turn the oven back down to 325 after 5 minutes (very dark and a bit crunchy on the outside but still moist and fluffy on the inside - some of my grandkids liked them better!). Now on to do a double batch of Cookie and Kate's amazing carrot cake and unbelievably good date-sweetened cream cheese topping.

I LOVE THIS RECIPE!! I have made it so many times. I embellish it by adding chopped walnuts, ground flax seed, hemp seed, and various dried fruit. So darn good! Pairs well with a delish fruit smoothie. Thank you for this creation :)
