I made them as written (substituting 1/2 the flour with AP organic white) with what I had on hand – sharp cheddar and a bottle of Japanese rice lager beer that had been rattling around in the refrigerator. Paired them with the vegetarian chili recipe from this site. Barely finished dinner and my guests were asking when I would make the biscuits again. Thanks for another great recipe!

I made these tonight with a Cobb salad (from Pinch of Yum). They were so delicious!! I used 1 1/2 cups of spelt flour and 1 1/2 cups of all purpose flour. Everyone loved them!
