Hi Katherine, I think it would work, but the recipes I tend to use streusel on top of are sour cream or greek yogurt based, so they do have more structure. If you give it a try, please share the results.

I had high expectations and love most Cookie and Kate recipes. I made the cream cheese and date frosting. I frosted it because it was a yoga friend’s birthday. I think the frosting was the problem. Mainly the texture of the frosting missed the mark for me. Maybe next time I won’t frost it or use another frosting.
