I don’t know why I never thought to put mushrooms into a quesadilla before. They sing alongside the spinach and avocado. As usual, I added a bunch of extra spices but what a brilliant idea of crisping up the cheese on the tortilla. Omnivore husband gave it a 3.5/5 but this was a perfect home run for me.
