					<description><![CDATA[I found this recipe when making the vegetable/feta frittata recipe from the weekly 5 meals email. I had one lonely potato so did half recipe. I grated half with skin on, the other half of potato I peeled prior to grating. 
My first time making homemade hash browns, always did home fries...this is my new favorite potato recipe. Came out perfect, the 2 minute technique works! I did use cast iron. I had a hard time not eating all of the potatoes right out of the pan...so good! Great breakfast for dinner combo with the frittata.]]></description>

I used my salad spinner to rinse and dry shredded taters and it worked just as well as paper towels- lost a few stragglers but worth it. Make sure that oil is HOT before you add the potatoes or they will be mushy. Thanks for all of your amazing recipes. They ALL have been 5 stars so far!!!]]></description>
