<p>This recipe is the cobbler version of my popular <a href="https://jyotirecipe.pages.dev/blueberry-almond-crisp/" type="post" id="17373">blueberry crisp</a>. It&rsquo;s based on my <a href="https://jyotirecipe.pages.dev/peach-cobbler/" type="post" id="46896">peach cobbler recipe</a>, which was arguably the most delicious dessert made in my kitchen last summer. I&rsquo;ve always loved making <a href="https://jyotirecipe.pages.dev/category/food-recipes/dessert/crisps/">fruity crisps</a>, and now I&rsquo;ve moved on to cobblers. Don&rsquo;t make me choose a favorite!</p>

As a bonus, they&rsquo;re remarkably easy to stir together by hand, with no chilling time required!</p>

My <a href="https://jyotirecipe.pages.dev/best-veggie-burger-recipe/">Favorite Veggie Burgers</a> are still my go-to, but these lentil burgers come in second. </p>



<p>These burgers are flavored with grated carrot, fresh cilantro or parsley, onion and garlic, and spices, including chili powder, cumin, salt and pepper. Two eggs are optional (omit them for vegan burgers), but they provide extra moisture and a lighter texture. </p>



<p>The recipe comes together beautifully in the food processor. Like my veggie burgers, these lentil burgers turn out best when baked in the oven, which is a more efficient and less fussy method than cooking them in a skillet. They turn out nicely golden and firm enough to hold their shape in between a bun. </p>

<p><strong>Meet the peach cobbler of my dreams!</strong> This irresistible dessert features warm, bubbling peaches with a golden cobbler topping that&rsquo;s craggy at the edges and tender inside. Make this recipe from mid-to-late summer when fresh peaches are at their peak. </p>



<p>This simple peach cobbler recipe is sweet but not too sweet, so the glorious peach flavor shines above all else. The filling is sweetened with honey, and the topping is lightly sweetened with lemony sugar&mdash;both of which impart some lovely complementary flavors that make this cobbler taste extra special. The recipe is not complete without some vanilla extract, cinnamon and yogurt for a light, buttermilk-like tang. </p>



<p>The buttery topping is made of almond flour, which offers a tender crumb and light almond flavor that pairs perfectly with ripe peaches. I tried making this cobbler with regular all-purpose flour and much preferred it with almond flour. Thanks to the almond flour, this recipe is gluten-free, whether you need it to be or not!</p>

<p><strong>Let&rsquo;s hear it for burrata cheese!</strong> I always order burrata when I find it on restaurant menus, and we&rsquo;ve had some stellar combinations this summer. I can&rsquo;t resist burrata&rsquo;s contrasting textures&mdash;it&rsquo;s like fresh mozzarella on the outside, but lusciously soft and creamy on the inside. </p>



<p>For this recipe, I designed a quintessential summertime burrata salad with fresh tomatoes. Serve it with <a href="https://jyotirecipe.pages.dev/crostini-recipe/">crostini</a> or a loaf of crusty bread to make it an appetizer. This burrata dish comes together in 15 minutes, believe it or not, and it&rsquo;s a real showstopper. </p>



<p>I wanted to keep it simple but make it taste special, so I drew reference from my <a href="https://jyotirecipe.pages.dev/easy-tomato-salad-recipe/">Easy Tomato Salad</a> and <a href="https://jyotirecipe.pages.dev/tomato-basil-bruschetta-recipe/">Tomato Basil Bruschetta</a>. I landed on a combination of cherry tomatoes and sun-dried tomatoes for depth, plus freshly toasted pine nuts for a savory note. <p><strong>These watermelon popsicles are refreshing, simple, fruity summertime treats. </strong>Here are a few more reasons to make these watermelon delights: </p>

<li>They&rsquo;re the easiest popsicles I&rsquo;ve ever made, requiring only one ingredient and careful slicing. </li>



<li>They&rsquo;re a great way to preserve extra watermelon. Watermelons can be massive.</li>



<li>They&rsquo;re as healthy as popsicles can be. </li>



<li>They&rsquo;re less messy for little kids to eat than fresh watermelon (watermelon juice stains are surprisingly difficult to remove from clothing). Adults will enjoy them, too, perhaps even more with a squeeze of lime juice or a sprinkle of chili-lime seasoning. </li>
</ul>

<p>Since I already changed one primary ingredient, I took the liberty of adding some chickpeas and feta cheese, more ingredients that you would not expect to find in tabbouleh. They&rsquo;re <em>entirely optional</em> and absolutely delicious. They make the salad more hearty; if you use both, it could qualify as a light meal on its own.</p>



<p><strong>This herbaceous salad is so refreshing on a warm day.</strong> It features fresh parsley and mint, tomato and cucumber, olive oil, lemon juice, garlic, and quinoa. The proportions remain true to the traditional recipe, so it contains more parsley than quinoa, and the lemon packs a punch. I think you&rsquo;ll love it. </p>

It&rsquo;s sweet but not too sweet, making it the perfect ending to a lovely summer supper.</p>



<p><strong>Clafoutis is typically baked with cherries,</strong> but you&rsquo;ll see that I used berries here, and you&rsquo;ll find more options below. My three-year-0ld loves clafoutis. She&rsquo;s been asking for more &ldquo;cherry cake&rdquo; since last summer, and it&rsquo;s about time we made more.</p>



<p><strong>I made clafoutis <em>over and over again</em> last summer until I got the proportions of this recipe just right</strong> (nine times, to be exact). Each attempt was tasty, but the recipe I&rsquo;m sharing today is perfection. I had to find the right balance between the amounts of flour, sugar, liquid and eggs to yield a silky interior that&rsquo;s full of flavor but not too eggy or wet. Here it is!</p>
