<p>This spinach lasagna recipe requires some effort, as all lasagnas do. That said, it comes together beautifully and is 100 percent worth your while. No-boil noodles save time and effort&mdash;have you ever tried working with floppy, sticky, freshly-boiled lasagna noodles? No need to struggle for this recipe. </p>

<p><strong>You&rsquo;ll love the fresh filling in these enchiladas,</strong> made of saut&eacute;ed bell pepper, broccoli, onion, spinach, black beans and warming spices. These enchiladas are nicely cheesy, but not overwhelmingly cheesy like many restaurants make them.</p>

<p>My husband, who has a major weakness for creamy pastas, also found the concept of a cheese-less lasagna questionable. I figured this recipe would convince him, so I brought some home and put it in the fridge. I soon found the man in the kitchen, going back for seconds. Then thirds.</p>

<p>When I dreamed up this recipe, I wanted to replace some of the pasta with roasted vegetables. In the end, I was able to displace half of the ziti (8 ounces) with two pounds (32 ounces!) of vegetables.</p>

<p>I chose cauliflower, which develops the most irresistible golden edges as it roasts, red bell pepper and yellow onion. I love this combination, but you could easily use your favorite vegetables here.</p>



<p>It took me a while to find the perfect ratio of mozzarella, marinara, and ricotta (I actually used cottage cheese, more on that in a bit). I believe I&rsquo;ve hit the nail on the head with the final recipe, and can&rsquo;t wait to hear how it turns out for you.</p>

<p>This lasagna is based on my <a href="https://jyotirecipe.pages.dev/spinach-artichoke-lasagna-recipe/">spinach artichoke lasagna</a> on the blog and the roasted eggplant lasagna in <a href="https://jyotirecipe.pages.dev/love-real-food-cookbook/">my cookbook</a>. I love those less-conventional vegetarian lasagnas.</p>



<p>Yet, I wanted to offer a classic vegetable lasagna suitable for holidays and weeknights, and this is it. The tomato sauce is the same across all three recipes, but the vegetables vary.</p>



<p>For this recipe, you&rsquo;ll chop bell pepper, zucchini and carrot into very small pieces and saut&eacute; them until they&rsquo;re nice and golden on the edges. That caramelization brings out so much more flavor. Then, add spinach to the skillet and cooked it down for a few minutes so it doesn&rsquo;t get too soggy.</p>

<p>Most restaurant enchiladas are so cheesy that I leave with a belly ache, but not these. They are delicious, satisfying and leftovers taste even better the next day. If you want to make a vegetarian dinner and hear, &ldquo;I don&rsquo;t even miss the meat,&rdquo; these enchiladas are for you.</p>



<p>This recipe is actually one that I shared back in 2011, but it was missing some key instructions, like how to roast the sweet potato. So, I revisited it and tweaked it a bit, and they&rsquo;re better than ever.</p>

<p><strong>Another shocker?</strong> Italians <a href="https://www.seriouseats.com/2017/04/how-to-make-real-deal-fettuccine-alfredo-sauce.html" target="_blank" rel="noopener noreferrer">don&rsquo;t pour any cream into their fettuccine Alfredo</a>! Let&rsquo;s now turn to give a collective eye roll at Olive Garden.</p>



<p>Jokes aside, <strong>this baked eggplant Parmesan is everything I want eggplant Parm to be.</strong> This recipe is made entirely from scratch, but it&rsquo;s simple to prepare. We&rsquo;ll roast the eggplant slices instead of frying them. Then we&rsquo;ll assemble the dish and bake it. Easy!</p>

<p><strong>We&rsquo;ll also skip the breading, which makes this eggplant Parmesan gluten free. </strong>Without the breading as distraction, the eggplant flavor really shines through. This dish might look super cheesy (ok, it <em>is</em> cheesy) but most of the cheese is on top of the dish so it can develop that irresistible golden crust.</p>



<p><strong>This recipe is healthier than most American eggplant Parmesans,</strong> but tastes like my nonexistent Italian grandmother made it. I made a quick homemade marinara out of tomato paste and fire-roasted tomatoes, which make it taste like it&rsquo;s been simmering on the stove for hours. If you&rsquo;re in a time crunch or looking to simplify, though, you can absolutely use your favorite jarred marinara.</p>

<p><strong>I&rsquo;m so excited about this paella recipe!</strong> I hope you are, too. Paella is a beautiful rice dish hailing from the east coast of Spain, near the port city of Valencia. I tried it for the first time in Barcelona about ten years ago, and none of the American versions I&rsquo;ve sampled since then have come close&mdash;until now.</p>



<p>Paella often includes seafood or meat, but I made this paella vegetarian by mixing chickpeas into the rice and adding extra vegetables. If you were to order this in a Spanish restaurant, it would be called <em>paella de verduras</em> (vegetables). My version is fresh, colorful, and hearty, thanks to brown rice and chickpeas.</p>

<p><strong>This paella is a great party option if your guests are following special diets.</strong> It&rsquo;s vegan/vegetarian/dairy free, gluten free, nut free, and soy free. Although, I&rsquo;d say it&rsquo;s a great party option in general! Just add a big green salad and Spanish wine (red or white would work).</p>

<p>After a few glorious days of sunshine and sleeveless-shirt weather, it snowed again yesterday. This baked ziti is precisely what I want to eat when it&rsquo;s cold outside. Hearty, saucy, cheesy pasta with redeeming whole grains and protein-rich lentils to keep me fueled for hours.</p>



<p>This dish is in sharp contrast to the pasta dinners I loved as a kid, which consisted only of refined carbohydrates and loads of sugar-laden marinara sauce. No matter how saucy pasta I could slurp down, I was always hungry 30 minutes later. No wonder!</p>

<p>I quickly lose my patience with recipes that require stovetop preparation followed by a long bake, but I kept this one as simple as possible. It&rsquo;s worth the [minimal] effort and the wait, I promise. One way that I simplified the recipe&mdash;without sacrificing health factors or quality&mdash;was by using store-bought marinara sauce. You&rsquo;ve probably noticed that not all pre-made marinara sauces are created equally.</p>
