<p><strong>Are you familiar with socca?</strong> If not, please let me introduce you! It&rsquo;s basically a rich, savory and salted chickpea flour pancake cooked in piping hot olive oil. The edges are crispy and chewy, the insides are flaky and tender, and the bottom is lacy and golden. It is just <em>so</em> good. You&rsquo;ll have to try it.   </p>



<p>Socca is a street food popular in Nice, France, with origins dating back centuries (it&rsquo;s closely related to Italian farinata). I had the chance to try the real deal on our honeymoon, and I&rsquo;m obsessed with this homemade version. </p>



<p>To make socca, you&rsquo;ll need a bag of chickpea flour (I like to use Bob&rsquo;s Red Mill, which is available in well-stocked grocery stores). You probably have the remaining ingredients already&mdash;olive oil, water, salt, pepper and cumin. That&rsquo;s it! You&rsquo;ll find step-by-step photos and a brief cooking video below, followed by the recipe.  </p>

<p><strong>Let&rsquo;s hear it for burrata cheese!</strong> I always order burrata when I find it on restaurant menus, and we&rsquo;ve had some stellar combinations this summer. I can&rsquo;t resist burrata&rsquo;s contrasting textures&mdash;it&rsquo;s like fresh mozzarella on the outside, but lusciously soft and creamy on the inside. </p>



<p>For this recipe, I designed a quintessential summertime burrata salad with fresh tomatoes. Serve it with <a href="https://jyotirecipe.pages.dev/crostini-recipe/">crostini</a> or a loaf of crusty bread to make it an appetizer. This burrata dish comes together in 15 minutes, believe it or not, and it&rsquo;s a real showstopper. </p>

<p><strong>Cranberry salsa? Why not!</strong> This surprising salsa is bold and tangy. The bitterness of the cranberries is tempered with sweetness from orange juice and a little bit of honey. Most cranberry salsa recipes are too sweet, calling for as much as one cup sugar.&nbsp;This one is well-balanced, and you can adjust it to suit your taste buds. </p>



<p>This cranberry salsa recipe was inspired by one my late grandmother brought to our family&rsquo;s Christmas celebration years ago. It was festive and colorful, and I just loved it. </p>



<p>With my grandmother&rsquo;s recipe in mind, I improvised this salsa last year when our friend <a href="https://saltedplains.com/">Tessa</a> and her husband came over. My grandmother served her salsa with cream cheese, but I noticed we all ignored the cream cheese and kept going back for more salsa. I don&rsquo;t think it requires an accompaniment, but you&rsquo;ll find serving suggestions below. </p>

Every layer is delicious on its own and builds on the last. The end result is creamy and cheese, of course, but it&rsquo;s also perfectly balanced. Fresh avocado, jalape&ntilde;o, cilantro, green onion and salsa offer fresh and bright flavors that cut through the cheddar cheese, sour cream and refried beans.</p>



<p><strong>Store-bought ingredients yield great results,</strong> so you don&rsquo;t have to turn on the stove to make this one. Each layer contains a fun little surprise, like a splash of salsa in the refried beans to loosen the texture and a burst of freshness from jalape&ntilde;o in the sour cream. Some white bean dips are downright unappetizing&mdash;they can be gloppy, too salty, or flavorless&mdash;but not this one. The Kalamata olives lend welcome richness in both texture and flavor.</p>
