The corn starch absolutely ruins the taste of sweet potato. It tastes chalky. It clumps up. They look like moldy potatoes when they come out.
Use baking powder! World of difference. I tried this recipe twice, thought I made a mistake.

I thought I followed the directions but they still came out soggy. I tried a batch in the oven and I tried some in the air fryer. I wound up putting them in grease in a pan on the stove. Just what I didnt want to do. There are some things I just can’t cook, crispy sweet potato fries are one of them.

It also took an additional 20 minutes just to get them a little crispy without burning the whole tray.
